Wagyu "Bavette" from Highland Wagyu is quite simply one of the most flavoursome cuts from the animal. Extremely sought after due to the heavy muscle grain and deep beefy flavours associated with this cut. This is another of the cuts where a little care needs to be taken not to over-cook. After a good resting period the Bavette should be carefully sliced across the gain at a 45 degree angle to produce delightful, mouthwatering steak that somehow just disappear before your very eyes!
