The Bavette from Miguel Vergara is one of those just simply fantastic cuts. I've chosen not to trim these and put them out as they are for best value. Most of the fat you'll see will render off with the cook and only minimal trimming is required to remove any clumps of fat and some of the tougher gristle along one side with a sharp knife.
The Bavette can be either cooked as a whole piece or cut into steaks by cutting with the grain. Best cooked rare - med/ rare and remember to rest well. When slicing to serve or eat, always cut in the opposite direction to the grain. At this point you will experience something magical from this tremendously juicy, full flavoured steak, often referred to as a favourite by meat lovers and connoisseurs alike.
