The Chateaubriand from the superior head of the fillet is removed from the whole fillet and tied into these beautiful small roasts. The beef itself is Galician cow, 8-12 years old and dry aged to full maturity. These are tidy little roasts with no waste whatsoever, just simple, deep flavoured tender meat that can used in a multitude of dishes.
