These are really good and flavoursome steaks. Cut from the Chuck or main part of the shoulder where the many muscles are usually associated with slow cooking beef, there are a few small muscles that cook really well when cooked to rare. This is the Chuck Steak and only a very few are selected to be cut as steaks. For them to hit the standard suitable for our needs they must have high fat marbling and decent muscle depth. When they're good and have what we're looking for they really are very good!
Don Pedro is all about quality when it comes to beef. Don Pedro don't cut Chuck Steaks so we buy in the whole chunks of shoulder, then breakdown and separate the muscles for steaking ourselves. All the way from Uruguay, South America we go out of our way to source some of the greatest beef in the world from these guys.
