These are fantastically marbled, succulent and flavoursome steaks. Cut from the Chuck or main part of the shoulder where the many muscles are usually associated with slow cooking beef, there are a few small muscles that cook really well when cooked to rare. This is the Chuck Steak and only a very few are selected to be cut as steaks. For them to hit the standard suitable for our needs they must have high fat marbling and decent muscle depth. When they're good and have what we're looking for they really are very good!
