We've selected these Pork Bellies from Castilla Y Leon, Spain for their wonderful meatiness and great depth of flavour and internal fat marbling for the succulence. Being from the same Pork as our exceptional Baby Back Ribs we have all confidence these are a superior cut to the normal.
The Bellies are large, thick and whole, un-cut with the bone in and rind left entirely intact. After thawing you may want to score the skin before cooking, this is easily done with either a Stanley or Craft Knife set to approximately 3mm and dragging across the skin. This will allow the fat to render well and the skin to crisp up well. Remember to salt the skin for the Win!!
