Undoubtedly one of the tastiest beef steaks on an animal. The Bavette steak is a heavily grained cut thats full of flavour. When cooked as a larger piece the Bavette lends itself to a light smoke and reverse sear process on the barbecue. However, it is also extremely tasty chargrilled in the regular barbecue way.
Some crucial points to remember when cooking this delicious cut.
- Do not overcook, this is a tough muscle that needs to handled correctly, ideally a nice dark pink to rare is perfect.
- Always rest the steak for atleast 10 minutes prior to slicing.
- And most importantly, always slice the steak against the grain into thin pieces, season and toss through the juices. Then proceed to level 1 in Meat Heaven.
