We use a lot of beef Skirt here, some is left with the skin on where it would traditionally be peeled back, stuffed and sewn up before stewing. We also skin many skirts to sell through our shops as a stewing beef for those who really know what makes a good pie. When it comes to pies, this Skirt make the most wonderful job. Deep robust beefy flavours ooze from the heavily textured beef. Absolutely delicious for make pie fillings or any slow cooked stew.
