Not to be confused with the Rib Cap that needs a bit of a slower cook, this is the Spinalis Dorsi muscle or the Ribeye Cap – that favourite piece of the Ribeye steak that sits on the outer edge. This is a rare cut we don’t see very often and these particular ones come from the amazing 2GR Wagyu. Beautifully marbled and an absolute gem of a product.
