Cooking Tips
Beef Wellington Cooking guidance
1. Preparation

Remove your Beef Wellington from the fridge and allow it to rest at room temperature for 30–40 minutes before cooking.

Preheat your oven to 200°C (fan 180°C) or Gas Mark 6.

Lightly brush the pastry with beaten egg for a rich golden finish.
2. Cooking

Place the Wellington on a lined baking tray and cook in the preheated oven for 40–45 minutes for medium-rare, or 50–55 minutes for medium.

For best results, use a meat thermometer to check the internal temperature as all ovens cook differently.
- Rare: 45–50°C
- Medium-Rare: 52–55°C
- Medium: 58–60°C
- Well Done: 65°C+
3. Resting

Once cooked, remove from the oven and let it rest uncovered for 10–15 minutes before slicing.

Remember, the meat will continue to cook as it rests, so take it out of the oven just before it reaches your desired temperature.
4. Serving

Slice thickly and serve immediately with your favourite festive sides and gravy.
