These are whole pieces of Shin Muscle taken from the superior hindquarter shin. Nicely trimmed of the thickest gristle leaving plump, meaty whole muscles. When it comes to low and slow cooking, this is the way to go for juicy tender and flavoursome beef. Remember though, they take a long time to breakdown but the results can be quite incredible!
