Small but Mighty Briskets – Great Beef, Great Value
These briskets come in a longer cut, which means you’ll notice a thinner navel end on most of them — that’s just the natural shape of the muscle and totally normal across all briskets, although usually trimmed a little further back. While they’re a bit leaner on one side, the overall quality of the beef is excellent, and we’ve priced them down accordingly to reflect the shape.
If you make your own burgers or sausages, the thinner ends are perfect for that. But don’t be too quick to trim them off too much — they tend to plump up nicely during the cook. With a bit of care and smart prep, these briskets will yield results as good as (if not better than) pricier options.
