Cooked a 6.8kg Vacio Asado style, open fire over birch and whisky oak staves, the meat pre rubbed with A+O chimmichurri/sea salt and basted with a herb brush and garlic butter. This huge piece of meat combines inner skirt steak, flank steak and bavette. Cooking for 4 ish hours in total its a better watch than your fave netflix series. Rest for an hour, the beefy taste is truly amazing, with lean and fat options, and a crispy skin that a gaucho would sell his saddle for, eats at med/med rare, make sure you have plenty mouths to feed. Unforgettable.
