These genuinely Wild Whole Partridge are delicious and fully kitchen ready for you to roast. Sourced in Scotland from local low-land estates and gamekeepers, these are not farmed and therefore, whatever recipe you use, you will benefit from the full gamey flavour that only naturally wild birds have.
These are a lean bird that need to be roasted fairly quickly without overcooking. Try with a slice of smoked streaky Bacon over the breasts to help protect during the cook, not only protecting this will impart further delicious flavours that go well with Partridge.
