Gotta say, these new Pork Collars from Catalonia, Spain are absolutely fabulous. Yes I know they’re not a UK but we struggle to source this product in this country so we select only the very best we can from further afield. This new producer from Spain ticks all the boxes for quality and the end product is really superb.

These are a tremendous product for hot smoking when you don’t want to cook an enormous Boston Butt… Oh and if you’re partial to… or not tried Collar Bacon then this is the ‘Mutts Nuts’, you’ll love it! Grab yourself a dry curing kit and go for it!
