Wild Scottish Red Deer Venison is an amazing product when sourced and handled correctly. This cut is the Tenderloin / Fillet – the most tender cut on any animal. Larder trimmed to a perfect specification and ready to cook. These are so simple to work with in the kitchen and have so many options for cooking. As they’re not very big, like a small Pork Fillet size, they are good for a quick Pan fry in sections or cut into smaller medallions – I personally like them like this with a splash of port at the end and a spoonful of cranberry sauce to finish. Mustard mash for the win, greens and a glass of red. Simple yet so flavoursome, this is truly wild Scottish Venison at its best
