These are the Top Rump Roasts from these cracking animals. They don’t all have a covering of fat like the one on the photo but we cooked off one of the worst looking pieces just to make sure they were good to sell. After 90 Minutes in the oven cooked to 52ºC internally we sliced up the beef and filled our rolls with nothing more than a good shake of salt and pepper. The outcome was far beyond any of our expectations which is terrific news and allowed us to confidently press on with getting these out for sale. Although a leaner muscle it’s clear from the cooking, the roasts are still of superior quality highlighted by the Wagyu X Shorthorn mix. Lovely stuff!

These Wagyu x Shorthorn breeds bring together the textures of Wagyu and the flavours of the Shorthorn to produce this excellent quality beef. Being grass few packs the punch in flavour with the diet supplemented by Olive feed and chocolate to provide essential nutrients and elements that contribute to the deep intra-muscular fat marbling we dream of.
