These really are fabulous Duck Legs from Ernest Soulard, France. Not only huge and very meaty with a super amount of fat which makes them all the more succulent. Rendered down in a long slow cook will allow you to harvest this fat to keep. Try using it on roast potatoes or home made Confit Duck.. Wow, just wow!
