Don’t know your Belly from your Ribs? Well this is a mixture of the two.. Basically when we do a UK Belly into a St Louis type rack of Ribs we cut like this then remove the Belly Meat from the top. With these absolute thumpers we’ve left the Belly meat on to produce Mega Pork Ribs!

Note, these are not St Louis cut Ribs, they’re skinned and squared off Pork Bellies. Personally I usually just do these with the skin left on so I can get the crackling too, but if I want to add flavour then these skinless Bellies are perfect and a deep score through the fat allows good flavour penetration.
