Cooked the first of these today in my KamaGear Kamado. I trimmed off the hard fat on top and some silver skin from underneath then used a small block of cherrywood in the charcoal and smoked at 230f for 50 minutes until 120f internal. Mushrooms and cherry tomatoes roasted on a soapstone on a lower level on other side of the divide and conquer. I took the meat off and rested for 15mins in foil, opened the vents while the mushrooms etc finished then whacked the steak on the soapstone. It had a beautiful colour in the middle when seared…almost like rose veal…and was extremely tender and succulent. I’d definitely recommend this cut.
