Poussin ~ Young Chicken

The Poussin, otherwise known as a Spring Chicken. These really are beautiful young Chickens, favoured for their delicious soft textures. Weighing in at around 400-500g each they’re normally served up a whole bird per person. We recently had these, drenched in a spicy brine for a few hours before smoking, Jeez! that was different!
