A true Scottish classic, our Traditional Oatmeal Stuffing, known locally as Skirlie, is a deliciously hearty side dish enjoyed all year round. Made from a simple yet flavourful blend of oatmeal, onion, suet, and a punch of peppery seasoning, this versatile dish brings a comforting, savoury touch to any meal. Whether served as an accompaniment to traditional mince and tatties, or alongside whole roasted birds, Skirlie adds warmth and richness to your table. Perfect for stuffing or as a standalone side, it’s a beloved staple in Scottish kitchens that pairs well with a wide variety of dishes.
A little butter or oil (optional, for extra flavour)

Instructions:
Heat the Pan:
Place a frying pan on a low heat. If you like, you can add a small amount of butter or oil to the pan to prevent sticking and add extra flavour.
Reheat the Skirlie:
Add the pre-made skirlie to the pan and gently raise the temperature to medium heat as the fat melts. Break it up slightly with a spoon or spatula if it’s clumped together.
Stir occasionally and heat for about 5-7 minutes, or until it’s warmed through and slightly crisped, depending on your preference.
Season (Optional):
Taste the skirlie and add a little more salt or pepper if needed. You can also sprinkle in fresh herbs like parsley for extra freshness, though it’s optional.
Serve:
Once it’s heated through, remove the skirlie from the pan and serve as a side dish with roasted meats, stews, or poultry.
Alternative Methods:
Microwave: Place the pre-made skirlie in a microwave-safe dish, cover with a lid or a microwave-safe cover, and heat on medium for about 2-3 minutes, stirring halfway through. Make sure it’s hot all the way through.
Oven: Preheat the oven to 350°F (175°C), place the skirlie in an oven-safe dish, cover with foil, and bake for about 10-15 minutes or until heated through.
